Mapo Tofu - no obscure ingredients! [Vegan]


1 tbsp brown/red miso paste
1½ tsp sriracha hot sauce
½ tsp soy sauce
½ tsp dark brown sugar
for the stock
10g/.35oz dried porcini mushrooms
1 tbsp soy sauce
1½ tbsp white wine vinegar
1 tsp sugar
1 tsp brandy
1 tsp cornflour (aka cornstarch)
for the main dish
200g/7oz button/chestnut mushrooms
⅓ cup/80ml neutral oil such as sunflower or groundnut
1 tbsp whole black peppercorns
1 medium fresh red chilli, thinly sliced
3 large cloves garlic, very finely chopped, crushed or grated
1½ tbsp/10g very finely chopped or grated ginger
4 spring onions (aka scallions), chopped, white ends separated from greens
700g/1.5lbs medium or firm silken tofu (normally comes in small cardboard boxes) sliced into large cubes
1½ cups/285g basmati rice, rinsed
